How to Become a Chef
If you have a passion for fine cuisine and fine detail then a career as a chef could be ideal for you. A chef is the head of the kitchen, however it can be used to describe a member of a professional kitchen despite their rank. Officially there are various differnt levels of chef in the kitchen. Each type of chef has their own individual role within the kitchen. Some larger establishments may have several of each individual type of chef whereas smaller restaurants may only have a few chef. The types of chef are as follows:
Head Chef – Executive Chef – Chef de Cuisine
As suggested by the tilte the head chef is on overall control of everything related to the kitchen including staff mangement, food ordering and menu creation.
The sous chef is second in command to the head/executive chef and is essentially their assistant. Sous-chef are normally only present in larger establishments.
Not all restaurants have an expediter. Sometimes their role will be performed by either the head or sous chef. The expediter’s role includes relaying orders from diners to the various stations within the kitchen. They will also finalize the dish by putting the finishing touches to it.
Station Chef – Line cook – Chef de parties
This role involves being in charge of a particular section of the kitchen for example: saute chef, vegetable chef, fish chef etc. The larger the kitchen the more line cooks there will be at each station. Each chef will have their own rank within each station, for example first cook, second cook, third cook and so on.
A commis is an apprentice who is there to learn the functions of a station. Usually the commis is fresh out of culinary school.
How to Become a Chef
To become a chef you must first undertake some training. Only once you have completed formal training will you be eligible to work in a professional kitchen.
